Puttanesca Sauce is a very spicy and strong flavored sauce made with garlic, bits of dried chile peppers, capers, and anchovies as key ingredients.
It can be mild or well seasoned depending on the type and amount of spices added, to be served on fish and pasta dishes.

Ingredients.
2 tablespoons olive oil
3 cloves garlic, crushed
2 tablespoons chopped fresh parsley
1/4 - 1/2teaspoon chilli flakes or powder
2 x 425 g ( 14 oz) cans chopped tomatoes
1 tablespoon capers
3 anchovy fillets, thinly sliced
1/4 cup (45 gr - 1 1/2 oz) black olives freshly grated Parmesan, for serving
Amount suggested for 500g pasta (1lb)
Directions
Cook the pasta in a large pan of rapidly boiling salted water until al dente. Drain, return to the pan and keep warm.
While the
pasta is cooking, heat the oil in a large heavy-based frying pan Add the garlic, parsley and chilli flakes and stir constantly, for about 1 minute, over medium heat
Add the tomato to the pan and bring to the boil. Reduce the heat and simmer, covered, for 5 minutes
Add the capers, anchovies and olives and stir for another 5 minutes Seasons, to taste, with black pepper. Add the sauce to the pasta and toss gently until tine sauce is evenly distributed Serve immediately with freshly grated Parmesan .
Traditionally, spaghetti is used with the sauce, but you can use other pasta if you prefer
