Few foods in the world are as popular as Pasta and there are good reasons for these: it's cheap, it's delicious, it's quick and easy to prepare, it's
nutritious, it’s not fattening and it's amazingly versatile…You could eat the same type of pasta everyday and just by changing the sauce or the accompaniment you could get a different dish everyday.!!
You can serve it cold in salads, warm in soups, you can dress up pasta for a dinner party with exquisite dips or you can serve it baked, you can make it stuffed and you can even serve it for dessert.
You can eat pasta every day of the week, as indeed many Italians do, and never tire of it.!!Pasta goes well with anything…For these and more reasons I can say I am a Pasta Fan!!!

Concchiglie Summer Salad
Ingredients
1 lb. extra sm. Concchiglie or Rotelle Pasta Type
1/4 lb. pepperoni, lg. deli sliced
1/2 lb. genoa salami
3 firm tomatoes
2 green peppers
2 sm. Onions
1 sm. jar olives, black
3 stalks celery
Dressing
1 tbsp. oregano, salt, pepper and sugar
3/4 c. extra virgin olive oil
1/2 c. vinegar
Place all ingredients in jar and shake well
Directions
Cook the pasta according to the package instructions until “al dente”, drain and let cool. Cut up all the rest of ingredients into pieces, approximately the same size as the pasta. Mix the Concchiglie or Rotelle and other ingredients.
Pour the dressing over everything and let marinate at least 24 hours mixing occasionally. Place in air tight container.
