When I was in college I had a very good Italian friend. He loved pasta, he taught me to appreciate this Italian food and very often he surprised me with great tasty and sumptuous lunches done in 15 minutes following his mother advices... “If you manage to do good sauces you have 80% of the dish done...”Later I had the chance to met his mother...and from her I learned dozens of tips, advices, sauces recipes, mixing ingredients secrets … and I learned that the other 20% of a great dish is to choose the right pasta!!
I still do not know if that was a rule in Italy, but she always said….choose the pasta and know how to cook it it’s a matter of practice….but doing the perfect sauce is a matter of talent… The secret is in the sauce...
Since then my preoccupation has been to discover the secrets to make the best sauce recipes...and now I am sharing them with you.
