Amatriciana sauce is a spicy pasta sauce sauted in olive oil with pork, spices, and various combinations of ingredients.
Amatriciana pasta sauce originated in the little town of Amatrice in Central Italy. The villagers had distinct ingredients that they included in the sauce, as well as a specific method for preparing the sauce. For instance, the original recipe always contained guanciale, which is dried pork cheek. Often now pancetta (dried bacon) is used instead.
The sauce can be made with or without tomatoes. Substitutions can be made on the ingredient list, but some form pork should always be included to give it a true Amatriciana flavor.
AMATRICIANA PASTA SAUCE RECIPE
Serves: 4
Preparation Time: 15-20 minutes
Ingredients:
1/3 cup olive oil
4 chopped onions
8 ounces chopped Canadian bacon or smoked ham
4 crushed cloves garlic
4 cups chopped canned tomatoes in juice
2 teaspoons sugar
3/4 cup dry red wine
salt and freshly ground black pepper to taste
Directions:
In a heavy saucepan, heat olive oil over medium-high heat.
Add onions and saute for 10 minutes.
Add bacon and garlic and saute for an additional 5 minutes.
Add tomatoes, sugar and wine and stir.
Season with salt and pepper.
Simmer for 45 minutes uncovered.
Stir occasionally.
Prepare vermicelli, spaghetti, or other pasta of choice.
Toss sauce with or serve over cooked, drained pasta.
Add grated Romano cheese.
