Learn how to toast nuts and seeds...enhance the flavour of your recipes!!!
Although the nuts and seeds called for in most of the
recipes can be used as they come from the can or the bag, toasting them lends richness and develops their flavor.
Unless the recipe specifies whole nuts, chop them before toasting, as the cut sides of the nuts allow the oils to come to the surface, resulting in more flavor.
You can toast nuts and seeds in a skillet on the stovetop or on a baking sheet in the oven. You can also microwave them, but I find this method tedious, as they must be turned every 30 to 40 seconds.
To toast nuts and seeds in a skillet (this works best for a small quantity, 1/2 cup or less):
Warm the skillet over medium heat add the nuts or seeds, and stir frequently until they begin to turn golden brown and fragrant, about 2 minutes.
Remove from the heat and immediately transfer to a plate or bowl, as they will continue to brown if left in the skillet.
To toast nuts and seeds in the oven: Preheat the oven to 350šE Spread the nuts or seeds on a baking sheet and toast in the oven until they begin to turn golden brown and fragrant, 6 to 8 minutes, checking them after about 3 minutes and stirring them at that time.
Remove from the oven and transfer them immediately to a plate or bowl.
Whichever method you use, watch carefully, as the high fat content of both nuts and seeds causes them to go quickly from perfectly toasted to burned.
